Huila is one of Colombia’s southernmost coffee-growing regions — home to the Nevado del Huila volcano and about 18% of the country’s coffee. This lot comes from Santa Maria, a town in northern Huila near the departmental capital of Neiva, grown at 1,500 meters. The natural process — drying the whole cherry on patios — is what gives this coffee its big, jammy fruit character.

In the cup: jam and watermelon — very fruity and very sweet, with a full body and bright, juicy acidity. A fun, fruit-forward Colombian that shines as drip or pour-over.
